"Lazy" Omelette with Iberico Chorizo

"Lazy" Omelette with Iberico Chorizo


  • Parsley
  • Potato chips (fried in olive oil)
  • Vasque Green chilis, Piparras. You can use any peppers for this. 
  • Caramelized Leeks. We caramelized these beforehand. Similar to what you would do with onions.
  • 3 eggs.
  • Sliced iberico chorizo.


  1. Beat eggs with a pinch of salt in a bowl. 
  2. Add potato chips and mix it all up. It's important to try and NOT break the potato chips. This will give the omelette structure. 
  3. Heat pan on high with generous amount of olive oil and pour in egg mix. Watch as the eggs cook from underneath. This is the reason we call it a "Lazy" omelette, because we don't flip it. Egg stays medium rare and partially runny. 
  4. Plate the omelette and add all the topics to taste: leeks, chorizo, chilis and sprinkle parsley.
